Summer is finally here!
I love making homemade popsicles from fresh fruit, and this recipe is one of my favourites!
I first had avocado popsicles in the farmers market in Hilo, on the big island of Hawaii.
I instantly fell in love and kept coming back for them every Saturday.
When I left Hawaii, I had to recreate those amazing popsicles…
Now every time I eat one, I close my eyes and imagine the coconut trees and the ocean just across the street from the market.
Prep time: 5 minutes
Wait time: 5½ hours
Makes 10 popsicles

Ingredients
- 2 ripe avocados
- 1 cup coconut milk
- 1 cup water
- 1/2 cup maple syrup
- 1/4 cup lime juice
- A pinch of sea salt
Instructions
Blend all of the ingredients in a blender until it has a smooth and thick consistency.
Taste and adjust sweetness if desired.
Pour mixture into popsicle moulds (leave a bit of room at the top for the popsicle stick).
Place in the freezer for half an hour, then add the popsicle sticks.
Keep in the freezer for 5 more hours, until they are solid.
Once completely frozen, run the popsicle moulds under warm water for a few seconds and gently remove the popsicles from the moulds.
Don’t have popsicle moulds? you can use ice cube trays for mini popsicles instead!
