What says summer more than watermelon mint popsicles?…
This hot weather got me craving something cool and refreshing, and these popsicles just hit the spot! they are quick to make (you just need a bit of patience while they set in the freezer..!) and while these are really fun to make with kids, there are also a couple of adult add on options in the recipe below.. 😉

Makes 6 popsicles

Ingredients
- 2 cups watermelon cubes
- 10 fresh mint leaves
- 1 tbsp maple syrup
- 1 tbsp lime juice
- A pinch of salt
- 1 tbsp minced fresh ginger (optional)
- Adult add on option: 2-4 tbsp gin or vodka
Instructions
Blend all of the ingredients in a blender.
Taste and adjust sweetness if desired.
Pour mixture into popsicle moulds* (leave a bit of room at the top for the popsicle stick).
Place in the freezer for 1 hour, then add the popsicle sticks.
Keep in the freezer for 4 more hours, until they are solid.
Once completely frozen, run the popsicle moulds under warm water for a few seconds and gently remove the popsicles from the moulds.
If you don’t have popsicles moulds, you can use ice cube trays for mini popsicles.
