If you know me well, you know summer is my favourite season.. it’s not just a season, it’s a mindset – spending time in the sun, the long beautiful days, gardening, picnics with friends, and of course – summer treats!
These popsicles are rich, creamy, and quick to make (you just need a bit of patience while they set in the freezer..!)
It’s really fun making these with kids, or of corse, for our own inner child..!

Wait time: 5 1/2 hours
Makes 8 popsicles

Ingredients
- 4 medium ripe banans
- 2/3 cup coconut milk
- 1/3 cup cocoa powder
- 1/4 cup maple syrup
Instructions
Blend all of the ingredients in a blender until it has a smooth and thick consistency.
Taste and adjust sweetness if desired.
Pour mixture into popsicle moulds* (leave a bit of room at the top for the popsicle stick).
Place in the freezer for half an hour, then add the popsicle sticks.
Keep in the freezer for 5 more hours, until they are solid.
Once completely frozen, run the popsicle moulds under warm water for a few seconds and gently remove the popsicles from the moulds.
If you don’t have popsicles moulds, you can use ice cube trays for mini popsicles.
