Mmmmm the amazing smell that spreads from the kitchen to the whole house when I make this jam is just.. mmmmmm… so good! Cinnamon, cardamom, ginger and nutmeg come together with beautiful apples for an amazing jam – perfect on a piece of toast, on a cracker with a slice of nut cheeze, in your morning oatmeal, or just on a spoon…!

Cook time: 25 minutes
Makes 1½ cups
Ingredients
- 4 medium McIntosh apples* (about 1.5 lbs)
- 2 tbsp cane sugar
- 1 tsp cinnamon
- ½ tsp ginger powder
- ½ tsp cardamom powder
- ¼ tsp ground nutmeg
- A pinch of ground pepper
- A pinch of salt
Optional Add ons:
- 1 tbsp rose water
- ½ cup roughly chopped walnuts
Instructions
Dice the apples (I keep the peel on).
Place all ingredients into a heavy bottomed pot and mix well (if you are adding rose water or walnuts, don’t add those yet). Cover with a lid.
Cook on low-medium heat for 15 minutes, stirring every few minutes, then lower the heat and simmer for 10 more minutes.
Check the jam – it should have a nice soft texture (if you use other apples, it could take up to an hour). Once the apples have a soft texture, remove from heat.
If adding rose water and/or walnuts, add now and mix well.
Transfer into clean jars, and keep in the fridge (you can also freeze it once it cools down).
*McIntosh apples (I get mine from The Apple Lady at the farmers’ market) are best for this delicacy as they cook quickly and have a perfect texture for this recipe. You can use other apples, but they will take much longer to cook.
