If I had to choose one thing I would have to eat for the rest of my life, it would probably be avocado.. Guacamole to be more specific, but I just love everything avocado. One of my favourite things about living in Hawaii was the amazing, butter-like, huge avocados – some of them were almost the size of my head..! Also, I was so excited when I got to visit The Avocado Show restaurant in Amsterdam in my last visit there a couple of years ago – everything on the menu has avocados in it!
This dressing is quick to make and is so creamy and dreamy.. You can also use it as a dip for veggie sticks and crackers, or as a spread in a beautiful sandwich! You might just find yourself eating it with a spoon…

Makes 2 cups

Ingredients
- 2 ripe avocados
- 1/2 cup roughly chopped fresh dill
- 2 tbsp white wine vinegar*
- ¼ cup olive oil
- 1 cup water
- 1 garlic clove
- 1/2 -1 tsp salt, to taste
- ¼ tsp ground pepper
*You can also use apple cider vinegar or rice vinegar instead
Instructions
Place all ingredients in a blender and process into a smooth consistency .
Got other herbs at home? you can substitute the dill for parsley, cilantro, basil or mint- either of these herbs would all be lovely in this recipe!
