I love red onions – they are so beautiful, and oh so delicious!

Red onions are my preferred kind of onion to use for most dishes – the deep purple can colour a dish beautifully whether it’s raw or cooked, and I love the extra sweetness it brings to the table (pun intended…).

In this vegan red onion jam, the sweetness of the onion combined with the balsamic and red wine creates a deep, rich flavour.

This jam is a wonderful addition to cheezeboards, can be enjoyed on pizza, on a piece of toast, served with roasted veggies, or just on a cracker on its own.

 

Prep time: 5 minutes
Cook time: 55 minutes
Makes 1 cup

Ingredients

  • 3 medium red onions (about 1 lb), sliced
  • ½ cup red wine
  • 4 tbsp maple syrup
  • 3 tbsp balsamic vinegar

 

Instructions

Place the onions in a medium sized heavy bottomed pot.

Cover with a lid and cook on low heat for 15 minutes, stirring occasionally.

Add wine, maple syrup, and balsamic vinegar. Mix well.

Bring to a boil, uncovered, then reduce the heat and simmer for 35-45 minutes, while stirring occasionally, until most of the liquid has reduced.

You can serve this delicious jam hot or cold
