A delicious summery salad, featuring local produce – you can grow your own greens or source them from a local farm, with the addition of beautiful Saskatoon berries..!

 

Prep time: 10 mins
Serves 2-4

Nut free Gluten free

(nut-free optional)

 

Ingredients

  • 2 cups kale leaves
  • 2 cups fresh spinach
  • 1/3 cup Saskatoon Basil Vinaigrette
  • 1/4 cup Saskatoon berries
  • 1/4 cup walnuts*
  • A pinch of salt
  • A few spruce tips (optional garnish)

* Substitute walnuts for pumpkin seeds for a nut-free option

Instructions

Wash and dry the kale. Remove the leaves from the stems, then tear the leaves into bite-size pieces. Place kale and spinach in a bowl and add dressing. Gently massage the dressing into the greens.

Top with Saskatoon berries, walnuts and spruce tips.

Sprinkle salt on top and enjoy!
