Special notes for this class:

Soaking nuts and seeds before blending them, creates nice creamy cheese.

Soaking nuts and seeds also helps us get more nutrients from our food, and make them easier to digest.

I recommend soaking nuts or seeds for at least 4 hours, and up to 48 hours.

If you are soaking nuts or seeds for longer than 12 hours, make sure to keep them in the fridge, and change the water every 12 hours.

If you soaked nuts or seeds and didn’t get to use them, you can freeze them (with the water) for another time .

If you forgot to soak nuts/seeds – you can soak them for 30 minutes in boiled water.

If your blender is not very powerful, you will need to blend the nuts/seeds a bit longer.

However, the better the blender – the creamier and nicer your cheese will turn out – if possible, I highly recommend getting a high-speed blender – I think they make a great investment!
